- 1 cup Masa flour (masa harina)
- 1 cup unbleached, un-brominated flour
- 4 teaspoons aluminum-free baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 4 tablespoons melted butter
- 2 eggs
- 1 cup water
*Can also use spelt, einkorn or a gluten-free flour of choice
- Mixing bowl
- Ovenproof dish for melting butter
- 8 X 8 glass baking dish
Preheat the oven to 400 degrees.
Place the butter in the pre-heating oven to melt.
Grease and flour an 8 x 8 glass baking dish.
Step 1. Mix the dry ingredients
Whisk together the masa, flour, baking powder, salt and sugar
Step 2. Make the batter
Mix together the water and eggs.
When the butter is melted, carefully remove from the oven.
Pour the butter and wet ingredients into the dry ingredients.
Mix until smooth.
Step 2. Bake the cornbread
Pour/spread the batter into the prepared baking dish.
Place into the preheated oven and bake for 20 minutes or until golden at then edges and just done in the middle.
Cool slightly in the pan. Cut and serve warm with butter. It is also great with maple syrup.
Cool completely and store covered in the fridge.
