This sweet and spicy granola was inspired by my mother's delicious recipe. It is great served with milk, yogurt or simply steeped in boiling water. It can also be used to make trail mix, granola bars or added to other baked goods such as muffins and cookies.

Cook time:1 hour (stir every 15 minutes)
- 9 cups rolled oats
- 3 tablespoons ground cinnamon
- 1 tablespoon ground ginger
- 2 teaspoons ground cardamom
- 1/2 teaspoon cloves
- 1 cup maple syrup
- 3/4 cup coconut oil
- 2 tablespoons vanilla extract
- Very large glass or metal bowl
- Two wooden spoons
- Medium sauce pan
- Large deep sided baking dish or jelly roll pan
- Spatula (for stiring the granola while baking)
Step 0. Preheat the oven to 250°.
Step 1. Mix the oats and spices
In the large bowl, mix the rolled oats and spices together.
Step 2. Mix the glaze
In a small saucepan, heat the oil and maple syrup until bubbly. Add the vanilla carefully. It may splatter a bit because the mixture is hot.
Step 3. Glaze the oats
Pour the liquid mixture over the oats. Toss with wooden spoons until the oats are well coated.
Step 4. Bake
Pour into a slightly greased 9 x 13 in baking pan. Bake at 250° for 1 hour, stirring every 15 minutes.
Let cool completely and store in an airtight container for several months.
